Die Anregung hierf\u00fcr habe ich von<a href=\"http:\/\/www.veganguerilla.de\/\" target=\"_blank\" rel=\"noopener\"> veganguerilla<\/a>, einem tollen Blog mit veganen Rezepten, den ich schon seit einiger Zeit verfolge.<br \/>\nSeitan ist reines Weizen-Eiwei\u00df oder auch Gluten, so dass alle Allergiker auf dieses Lebensmittel an dieser Stelle umschalten k\u00f6nnen \ud83d\ude09 Es handelt sich sozusagen um den Rest der \u00fcbrig bleibt, wenn man einem Weizenteig die St\u00e4rke entzieht. Vor einiger Zeit hatten wir bereits einmal fertigen Seitan gekauft, waren jedoch mit dem Geschmack \u00fcberhaupt nicht gl\u00fccklich. Daher jetzt der Versuch, ihn selber herzustellen.<\/p>\n<p><a href=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_01.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3481\" alt=\"Seitan_01\" src=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_01.jpg\" width=\"800\" height=\"622\" srcset=\"https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_01.jpg 800w, https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_01-300x233.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a><br \/>\nMan braucht:<\/p>\n<ul>\n<li>1 KG Weizenmehl (ich habe Typ 1050 benutzt, andere Typen funktionieren aber bestimmt auch)<\/li>\n<li>etwa 450 ml Wasser (it depends, also nicht gleich alles Wasser zum Mehl kippen)<\/li>\n<li>eine robuste K\u00fcchenmaschine oder kr\u00e4ftige Oberarme<\/li>\n<\/ul>\n<p>Aus dem Mehl und dem Wasser einen Teig kneten. Durch die gro\u00dfe Menge Mehl dauert dies a) ca. 15 min. und bringt b) die K\u00fcchenmaschine an die Grenze ihrer Leistungsf\u00e4higkeit. Weniger Mehl macht aber nicht viel Sinn, da das ganze Procedere einigerma\u00dfen aufw\u00e4ndig ist und am Ende auch nur eine \u00fcberschaubare Menge Seitan entsteht.<\/p>\n<p><a href=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_02.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3482\" alt=\"Seitan_02\" src=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_02.jpg\" width=\"800\" height=\"534\" srcset=\"https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_02.jpg 800w, https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_02-300x200.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a>Den entstandenen Teig, der etwa so wie oben aussehen sollte, in eine gro\u00dfe Sch\u00fcssel mit lauwarmen Wasser legen &#8211; so dass der Teig vollst\u00e4ndig bedeckt ist.<\/p>\n<p><a href=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_07.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3487\" alt=\"Seitan_07\" src=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_07.jpg\" width=\"800\" height=\"534\" srcset=\"https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_07.jpg 800w, https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_07-300x200.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a> 40 Minuten ruhen lassen und danach anfangen den Teig in der Sch\u00fcssel zu kneten. Sofort werdet ihr merken, wie die St\u00e4rke aus dem Teig austritt und das Wasser milchig weiss f\u00e4rbt. Das Wasser dann abgie\u00dfen und neues Wasser in die Sch\u00fcssel laufen lassen.<\/p>\n<p><a href=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_03.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3483\" alt=\"Seitan_03\" src=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_03.jpg\" width=\"800\" height=\"534\" srcset=\"https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_03.jpg 800w, https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_03-300x200.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a>Diesen Vorgang so oft wiederholen, bis die Br\u00fche nicht mehr weiss, sonder leicht durchscheinend ist. Sollte der Teigklumpen auseinander fallen, nehmt ein Sieb zur Hilfe. Ich habe ungef\u00e4hr 8-10 mal das Wasser gewechselt und es hat sich als hilfreich erwiesen, die Kneterei direkt neben dem Sp\u00fclbecken und dem Wasserhahn zu verrichten.<\/p>\n<p><a href=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_04.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3484\" alt=\"Seitan_04\" src=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_04.jpg\" width=\"800\" height=\"632\" srcset=\"https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_04.jpg 800w, https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_04-300x237.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a>Beim Kneten werdet ihr merken, wie sich langsam die Konsistenz des Teigklumpens ins Gummiartige verschiebt. Au\u00dferdem wird der Klumpen immer dunkler. Einzelne hellere Stellen enthalten noch St\u00e4rke und ihr solltet so lange weiter kneten und auswaschen bis sich eine farblich und haptisch homogene Masse gebildet hat. Das Ergebnis sah bei mir so aus:<\/p>\n<p><a href=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_05.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3485\" alt=\"Seitan_05\" src=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_05.jpg\" width=\"800\" height=\"534\" srcset=\"https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_05.jpg 800w, https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_05-300x200.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a>Jetzt muss der Klumpen ausgewrungen werden (was erstaunlich gut funktioniert, da ihr eine wirklich sehr elastische Masse in den H\u00e4nden halten solltet). Danach muss er ein wenig ruhen, entweder fest in Klarsichtfolie verpackt oder, wie bei mir, im Weckglas.<\/p>\n<p><a href=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_06.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3486\" alt=\"Seitan_06\" src=\"http:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_06.jpg\" width=\"800\" height=\"675\" srcset=\"https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_06.jpg 800w, https:\/\/www.cala-kocht.de\/wp-content\/uploads\/2014\/01\/Seitan_06-300x253.jpg 300w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a>Nach ca. 30 Minuten k\u00f6nnt ihr den Seitan kochen und danach marinieren, denn \u00e4hnlich wie Tofu schmeckt das reine Eiwei\u00df erst mal nach Nichts. Vor einiger Zeit hatten wir bereits einmal fertigen Seitan gekauft, waren jedoch mit dem Geschmack \u00fcberhaupt nicht gl\u00fccklich. Daher jetzt der Versuch, ihn selber herzustellen. Man braucht: 1 KG Weizenmehl (ich habe Typ 1050 benutzt, andere Typen funktionieren aber bestimmt auch) etwa 450 ml Wasser (it depends, also nicht gleich alles Wasser zum Mehl kippen) eine robuste K\u00fcchenmaschine oder kr\u00e4ftige Oberarme Aus dem Mehl und dem Wasser einen Teig kneten. Durch die gro\u00dfe Menge Mehl dauert dies a) ca. 15 min. und bringt b) die K\u00fcchenmaschine an die Grenze ihrer Leistungsf\u00e4higkeit.
